I was looking for new soup ideas and ran across this recipe for a pumpkin turkey chili. It sounds good, I haven't made it yet.

Pumpkin Chili Mexicana
2 tablespoons vegetable oil
1/2 cup chopped onion
1 cup large chopped red bell pepper
1 clove garlic, finely chopped
1 pound ground turkey
2 (14.5-ounce) cans diced tomatoes, undrained
1 (15-ounce) can LIBBY'S® 100% Pure Pumpkin
1 (15-ounce) can tomato sauce
1 (15.25-ounce) can kidney beans, drained and rinsed
1 (4-ounce) can ORTEGA® Diced Green Chiles
1/2 cup whole kernel corn
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon ground black pepper

I'd skip the canned green chile and roast some fresh, but otherwise it sounds flavorful and quite healthy. Personally I'd also cut the cumin in half because I am not a fan, and I'd spice it up with some extra cayenne.

I modified a nacho recipe I used to make all the time pre-op and I love it.  

Mexican Casserole

1 lb ground turkey
1 taco seasoning packet
1 small onion
1 can fat free refried beans
2 cups reduced fat shredded mexican cheese
6 whole wheat tortillas 

Dice onion.  Brown ground turkey.  Add diced onion to browned meat and coo****il onions are glassy.  Add taco seasoning and cook according to packet.  Once cooked, blend meat with can of refried beans.  Layer wheat tortillas; meat mixture; cheese; tortillas; meat mixture; cheese; tortillas; cheese.

Bake at 350 degrees until cheese is brown and bubbly.  Let stand 15 minutes before serving.  

Garnish with sour cream, lettuce, and diced tomatoes.  Yummy!!!!

I absolutely love to make this Rachel Ray Recipe! Like most of her recipes it's simple, easy and quite tasty!  It's tradition for me to make it the day after Thanksgiving! 

Rachel Ray's Turkey Corn Chili

Ingredients

  • 1 tablespoon (1 turn around the pan in a slow stream) extra-virgin olive oil
  • 1 medium onion, chopped
  • 1 large bell pepper, red or green, chopped (use up leftover pepper strips from crudite tray if you have them)
  • 1 jalapeno pepper, seeded and chopped
  • 1 bay leaf, fresh or dried
  • 1 1/2 pounds light and dark meat cooked turkey meat, diced
  • 1 1/2 to 2 tablespoons (a palm full) chili powder
  • 1 1/2 to 2 tablespoons (a palm full) ground cumin
  • 1 teaspoon to 2 teaspoons (several drops) cayenne pepper sauce
  • Coarse salt
  • 2 cups frozen corn kernels or leftover prepared corn
  • 1 (32-ounce) can chunky style crushed tomatoes
  • 2 cups prepared chicken stock or broth, paper container or canned
  • 2 scallions, white and greens, chopped

Directions

Heat a deep pot over medium high heat. Work close to the stove for your chopping. Add oil to your pot, 1 turn of the pan, and add vegetables as you chop them.

Add bay leaf and cook vegetables 5 minutes, stirring frequently, reducing heat if veggies start to stick. Stir in diced turkey meat and season with chili powder, cumin, and cayenne sauce. Season with a little salt, to taste. Add corn, tomatoes, and broth. Combine your chili well, adjust seasonings, reduce heat to medium low, and simmer for 7 to 10 minutes. Garnish chili with chopped scallions.


Back to me now, I use the diced jalapeno in the can, makes it easier for me, and I can adjust the heat to my liking (I don't like hot spicy foods).   I also love the way Rachel measures. It will work out fine when you measure like she says. I was a little leary about the palm measurements,ya know, I'm sure my palm is alot bigger than hers!, but it always tastes great!  Just make a cup and pour spice in until it makes a mound that fills your palm, believe me you don't have to be precise!  This chili even with the jalapeno is not really spicy, of course that depends on the jalapeno you put in it!  I bet it would be just fine without it or maybe with diced green chili instead!

I don't do anything fancy because I'm not much of a cook, but I have a recipe that helps with the occasional sweet cravings I can't control. 

1 box low sugar cake mix with Splenda,  any flavor
1 can of diet soda, any flavor

Mix the two, pour the mix into a muffin pan that has been sprayed REALLY well with Pam. Cupcake wrappers don't work well because the cake mix really sticks to the paper.  Bake until done, usually similar to instructions on the box.
