Calorie Countdown - Muscular Monday, what are you feeding your guns?

Good morning. Its muscular Monday because I've got to get back to weight training. My goal is 3x week cardio and 2x week weight training.
M - cardio
T - cardio and weights
W - nothing
T - weights
F - nothing
S - cardio
S - nothing
I hereby vow to stick with this schedule for at least two weeks before I give up.
Here is my food plan today
Pre-B: cup of tea with a tsp of honey, my voice is going and I had to teach this morning
B - 2 eggs with cheese and salsa
L - whole grain crackers and goat cheese, some fruit
S - protein shake made with mootopia
D - chicken tenderloin sauteed with red and green bell pepper, garlic, onion, potatoes, and tomatoes with lentils, spices, and citrus (mimic of a Persian dish my Persian friend's mom used to make - the tomatoes become sort of a sauce with the olive oil and lime juice) I don't have any saffron but otherwise it tastes similar

I am pretty good about getting in activity everyday, but I do a poor job of following a formal routine with exercise. What usually happens is that I just make sure I take the stairs everywhere, park far away, get up and walk around for 10min every hour, and maybe take a walk in the evening or do 30-60min of heavy cleaning. Unfortunately none of those things make my gym membership very useful, so I am going to try to get back to that too. The last few weeks were just too hectic to fit in the gym, but its starting to calm down some now.
My morning started at 2AM when Mom called that she wasn't feeling well. We got up and drove over but decided she had probably had too much pain meds and was dizzy, so didn't go to the hospital. My brother showed up at 3AM so I took hubby home and got my stuff together then went back. Her back is killing her so I'll get her into the Chiro as soon as possible. After my brother left for wark at 4:30 I think I got an hour or so of sleep, it's going to be a long day!

My day is all messed up. Our power went out around 12:30 this morning and stayed out until about 6:30 this morning. We were up most of the night making sure our sump pump didn't back up and went back to bed around 7ish, so meal times are not what they usually are.

S- maybe the rest of the chicken and veggies or possibly a protein shake since I"m kinda low today.
Hoping to get at least 60 oz. of water in since I'm low on that today too.
