Let's Talk Soup!

I like nice, hearty, substanstial soups on cold days. 

After enjoying two different kinds of soup today from a yummy soup shop in Evergreen, CO, I decided it's time to drag out the crockpot and start making soups for the cooler weather.

What kind of soups do you like?  What are your favorite soup recipes?  Post them here!

Kix... I (((HEART))))soup and make a huge pot almost every weekend. I have 2 or 3 that I routinely make. I don't have time right now.. Got to get moving for the day.. But I'll post the recipes later. Keep in mind that when I cook I add a little of this and a little of that so sometimes you need to play with the recipe to suit yourself..

I am a major soupe person. My fave to make is chicken tortilla soup (I think I've posted the recipe on my OH page) and minestrone. I haven't posted that recipe. I don't really have a recipe for any other soups I make - that's the beauty of soup, just throw stuff together and there you go. I like lentil soup bunches and its great for you.

Oh, pea and ham.  here is my absolutely delicious crockpot receipe;

In Australia we can buy already diced soup mixed vegetables which you can put in the pot, so if you can get them there I put in two packets or chop up the standard soup veges.
I either use bacon bones or pork hocks, I think bacon bones give a better flavour
I also add extra short cut bacon pieces
I packet of soup mix containing barley and peas etc, I don't pre-soak this because you don't have to with the crockpot.

So combine all ingrediants, cover with water and turn the crockpot on automatic and leave.  I usually put it on in the afternoon and cook it all night, I stir it before bed and when I get up.  If I make it on the weekend, say on a Friday night, on Saturday morning I turn it to low and leave it all weekend and just have a bowl when I want to, if you do this you might have to top up with water every now and then as it will thicken.  Oh and in the morning I remove the bacon bones and suck the stuff off them because they are so good.

I freeze in individual containers and heat in the microwave when I need it.

So yummy!!!!!

I like soup too, but I can't eat it post-op (surgery center diet recommendations).  So, I've become a bigger fan of white chicken chili and regular chili since then.  I may break down and make one pot of chicken wild rice soup this winter though - it's my all time fave.  It has a fair amount of butter and cream in it though so it's not too WLS friendly (although it does have ham and chicken for good protein).

I LOVE soup! I like to make what I call a Kitchen sink soup - you know, I throw everything in it but the Kitchen sink!

I start off with an organic low sodium broth, chicken, beef or veggie and then just add whatever I have in the fridge. Tons of different veggies and I'll change up the meat.
