I ended up making this salad tonight

http://thepioneerwoman.com/cooking/2008/03/my_most_favorite_salad_ever_ever_ever_ever/

YUMMMMMMM! I cannot stress the yum factor enough.

Granted pasta is not a great idea and its vegetarian, but I did at least use barilla plus, which has more protein.  This is just too good.

I added more lime juice to it, and skipped the napa cabbage (I used purple cabbage and spinach).  I also didn't add quite so much ginger because ginger can be so strong, I'd say I used half her amount but it definitely could have handled more.  And only one cucumber.

This would be a HUGE hit at potlucks.

It is far and away the best thing I have eaten in a loooong while.

So there ya go. Make. It. Now.

Oh it makes a TON so you need some non-RNY tummies around to fini****

I love the Pioneer Woman's website. I go there often to read her blog and have made several of the recipes for my hubby and son. I will have to try the salad, it looks so good.

Good website.  That delayed my plans about 1/2 hour....as eggface calls it....food porn.

Anyway, I'm more the meat and beggie type of gal.  There's too much color in the salad for my tastes, but I'm going to try some of the meat recipes from that site!  The Marlboro Man's Favorite Sandwich (and his 2nd favorite) both look delicious and could be done with minimal amounts of carbs - now if I could just figure out how to cut down the butter in the first one (although, according to DH, butter IS my favorite food).

Have any of you tried shiratake noodles? They are about 40 caloried sor 2 cups!! My mother buys them & raves about them... It looks like they would be really good with this salad.... Now... if I could only findthem in the sticks of Vermont.... hmmm... maybe a coop?

Shiratake noodles are a great idea! Yes I have had them, and they are pretty good. I bought them at an Asian grocery store, but I'm sure you could get them online too.
