Cottage cheese haters

I just read the post from you cottage cheese haters.  I think I could get seriously frustrated at all of you!!!    (JOKING here folks)         I love cottage cheese  and all dairy products but yogurts but can tolerate only 1/4 cup every 4 days.    Not lactose intolerant  its another kind of allergy.

I'm a tried and true dairly lover also.  I am sooo thankful that I am not lactose intolerant since surgery!  I like cottage cheese, any kind of cheese, milk, and yogurt.  Yogurt is my least favorite but its been growing on me lately :)

I consider yogurt to be slimy sour milk.. To be honest  I think its the texture  I can't stand.   Since I can have so little dairy anyway  I don't worry about learning to like it  I'd rather save my little bit of dairy  for ice cream and cheese!

You're too funny!  I'll tell ya, there are 3 foods that I wish I could like:  1) cucumbers, 2) mushrooms and 3) COTTAGE CHEESE!  Those 3 food items alone would immensely open up my food repertoire.

I have never been able to eat mushrooms, hated the way they tasted and their texture.  For some reason since surgery I like them a lot more.  I don't seek them out, because out of habit I don't consider them edible, but when I taste them now I REALLY like them!  Its very strange.  Yogurt is the same way, I like it a lot better than I did a year ago.  I've always liked cottage cheese and cucumbers though :)

OK, here's my 2 breakfast cottage cheese recipes. I like it best with ricotta, but CC works too. I estimated the quantities. I used to make these all the time back in the days of toaster ovens (pre-microwaves).

Cheese Danish (an old Weigh****cher's recipe)
1 pc of fiber-filled toast of your choice - I used to like Pepperidge Farms Thin sliced wheat
1/2 C. cottage cheese, spread over the toast
sprinkle with Splenda & cinnamon
Toast in toaster over or under broiler until cheese is bubbly.

Breakfast Pizza
1 sm WW pita toasted
1/4 c spaghetti or pizza sauce (I used to use Ragu Chunky gardenstyle - prolly too much suger for us now)
thin sliced onion, red and/or green peppers
1/2 C cottage cheese (also good with unstrung string cheese)
oregano, garlic. basil, Italian seasoning to taste
Toast in toaster over or under broiler until cheese is bubbly.
