I bet this would be good with chicken too!

Verdict on the zucchini lasagna - it was good but next time I'll change some things.  First I'll use ground beef or turkey or even chicken in place of the sausage - sausage doesn't agree with me since surgery.  I hadn't tried again in a few months, so I figured I'd try it.  Nope.  Still doesn't agree, and my particular sausage was hard to chew thoroughly enough.  Second, I think I'd prefer slicing the zucchini cross-wise instead of length wise because unless you have a mandolin its hard to make all the slices equal.  I also think I cut them too thick.  Next time I'll thinly slice them cross-wise and overlap them in each layer.  Otherwise, I think it was very tasty.  Probably better than classic lasagna.  Also, I added shredded carrot.  Yum.
