Who here eats bison? (Besides Kix)
What do you think of it? I have had it ground a few times lately and like how tender it is, but it doesn't always settle perfectly and seems a little oily (I can only find 90/10 here so far). I am mildly nauseas from the tacos tonight.
Any suggestions on cooking it? So far I've made burgers, tacos, and meatloaf. I like it in that its hormone/antibiotic free and grass-fed (although they grain feed them for the last couple weeks to make the fat white, which is just stupid). Its cheaper than grass-fed beef.
Any thoughts?

I drain the fat, but its still fattier than I prefer ground meat too. I could wa**** I suppose, but I'll probably just keep searching for 96/4, which is what I use for ground beef generally also. I like that its not terribly gamey, tastes a lot like beef but just a little more flavor - sweeter and maybe more tender? Have you tried buffalo steak or anything?
Your Whole Paycheck may have 96/4 bison, I've bought it there before. I get my buffalo patties at our Vitamin Barn (or Natural Grocer, or whatever they are calling themselves these days). I have eaten buffalo steak at The Fort (posh restaurant not far from my house that specializes in game meats), but I haven't tried cooking it at home yet.

We have a Buffalo Ranch near us that on ocassion has a truck parked advertising a side of Buffalo sliced and diced and ready to go..... I've got to convince the DH that we need to stop the next time they're out there.... LOL

My family eats bison. I find it very happy on my tummy - but then again, I've never really had a problem with hamburger either. I tried a buffalo roast (like a pot roast) and put it in the crock pot with beef broth and onion soup mix. I could NOT believe how little fat there was - like NONE! It was good. It's so expensive that I'm not jumping through hoops to get more, but we are on the trail of some buffalo ranches here.
You may want to try making chili - it's awesome!!!
