Happy Friday everybody!
Plans for the weekend...
Working today, then shopping for new clothes!! Tomorrow I am joining the gym - do they have ANY idea what they are in for? ha ha
Plan to visit some friends I have not seen in a very long time, hopefully I find a really nice outfit to WOW them with.
Then of course the regular stuff - housework, groceries etc. and begin planning the baby shower for my daughter. I am going to be a grandma in July and it's a girl!!
That should keep me busy and out of the racino (lol)
Have a great weekend everyone!

Moving is such a pain, I think we'll be doing it at the end of July - when its 100 degrees out and 85% humidity. Yay.

Good morning, Jen and welcome to Friday! How's the new haircut? I'm looking forward to seeing pictures of the new do!!! I'm having lunch with a friend today at a restaurant where I'm not familiar with the menu, so don't know what I'll choose there. I've heard they have some great salads, so I'm hoping for a salad with grilled chicken, salmon, or perhaps shrimp. And if the great weather holds out, we're going to grill something for dinner - whatever looks good when I stop at the grocery. Maybe steak, or a juicy burger or a Johnsonville bratwurst - they all sound pretty good to me!!!
Here's what's on my plate today -
Breakfast: 1 cup 1% milk in my coffee, 1 packet Quaker Weight Control Oatmeal
Snack #1: 1 cup low-fat cottage cheese, 4 tbsp. sugar-free preserves, ~1/2 c. sliced strawberries
Snack #2: medium banana
Lunch: (edited to reflect what I ate at lunch) - shrimp and crab salad on ciabatta roll (ate all the salad and half the roll), steamed broccoli, and one-half of a "downy yellow cake with strawberry buttercream frosting (I split a dessert with my dining companion - it was fabulous and worth the hour i'll need to spend on the elliptical to burn off the calories!!!!)
Snack #3: Trader Joe's greek style blueberry yogurt, 1/4 c. Kashi granola (yum!)
Snack #4: 1 slice whole-grain bread, 4 slices of turkey breast, 1 slice low-fat cheese, leaf lettuce
[workout #1: 60 minutes of cardio]
Snack #5: medium apple

Hi Kellie, the haircut is short. It was weird to wash my hair this morning, and I have no clue what I'm doing when I style it. (And pictures are in my blog or yesterdays calorie countdown). I love grilling! We think we are going to rent a house starting this summer (with a pool!?!) - my friend is graduating and moving to Canada for her post-doc but she doesn't want to sell her house yet so she is willing to rent it to us for at least a year, possibly more or "rent to own" if we are interested in staying in SA. Its a smallish house, but it has a POOL so I am sold! And the rent she wants to charge is $150 less than we are paying for our apartment now. Our lease is up at the end of July and I really want to move.
House with a pool sounds fabulous, especially in SA, even if the joint is a bit small. And for $150 less than what you're paying now? Sounds great. Oh, except the part where you have to move. In Texas. In July. Whatever week you happen to be moving, I'm busy and can't pop down to help :-)
I think I mentioned in some other post that I love the new do - very cute!!!
Kellie
I'm not as good at planning my meals as everyone else here is on the board, but I am totally aware of what I am putting in my body because I use an on-line calorie counter so that's a good thing.
I've got statistics in the AM. I am so ready for this class to be over. I'll have a break from May 5 - June 24. I'll be able to get away for the weekend and not worry about what I've missed in class.
We had mini meatloafs last night. 80% ground beef with ground veal, egg, italian bread crumbs, shredded onion, garlic, lemon pepper, cilantro. It's 1 pound of ground beef and 1/2 pound of ground veal. Made 15 servings (in a muffin tin) cooked @ 350 for 25 minutes
nutrition info:
Calories 113
Carbs 2.5
fat 7.1 (use 93% lean for lower fat content - I didn't have any on hand)
Protein 9 g
I was able to eat two of them and it was like comfort food heaven. I like messing around with meatloaf recipies. I will say that there was a ton of fat in the muffin tins. Not sure if it was the beef or the veal. Never used veal in meatloaf but it was very good. Added a different dimension to it.
So I served it to my husband with a Top Chef description:
Tonight we have mini gourmet beef and veal meatloafs with smashed fingerling potatoes and parmesean cheese, and herbed steamed vegetable medley. he looked at me like I had been watching too much TV, but they were really good.

Those sound delicious! I like and still make meatloaf since surgery, but one of the things I do to health it up is add shredded carrots and other veggies, plus fiber cereal or benefiber & I usually just use lean ground beef - not a ground turkey or ground veal fan.
