What on your Easter menu?

Just being nosey and wondering what you were all having for Easter dinner? Everyone's coming to our house and I'm doing 98% cooking this year, makes it easier for me, plus I love it! We have a family of diabetics so everything I make is Sugar Free and they all know if I made it they can eat it. Here's my menu -  Ham with SF apricot glaze Beer Can Chicken, for those that don't want/like ham mandarin Jello mousse Pistachio Fluff pickled eggs homemade potato salad - MIL makes the best relish platter fruit platter veggie platter Dutch crunch rolls - thanks to the local bakery Dessert - SF custard pie

I'm only making dinner for 4 - 3 of which are healthy hungry young people who want sugar I'm sure.  I think it will probably be - spinach strawberry walnut salad (baby spinach, strawberries, walnuts or almonds, green onion, and raspberry walnut vinagrette) roast chicken with rosemary and lemon roasted asparagus with lemon and butter panzanella if I can find a few varieties of good tomatoes, or rice pilaf if I can't dessert, I hadn't thought too much about yet but probably something fruity like poached plums and ice cream or a berry cobbler with ice cream I will probably fill up on salad and chicken, and have a small amount of dessert, no ice cream.  Asparagus doesn't like me anymore (gas-tastic) but I'd have some tomato and maybe a hunk of bread from the panzanella.  I love to cook for people and am glad I still can despite surgery.  I don't know if our friends are expecting ham but I have some in the freezer from a ham we bought a few months ago - I may heat that up also and make some kind of citrus glaze.  I'm not crazy about ham since surgery.

Well as odd as this sounds I making Cuban pork with yellow rice and Black beans and plantains... Fresh grean beans and root veggies with honey and butter.   and home made cuban bread...   No we are not spanish but we spent years in Tampa eating the best Cubn food and Many of our  friends were cubn and would make these foods for us we always liked it and never eat it any more.  So this was my Dhs request. Of course I will have fresh fruit and veggie trays My brother is bringing desert   home made cinnamon rolls he makes these big fluffy cinamon rolls that are soooooooooooo good hot right out of the oven.  I can't eat them but I can eat other sweets so I asked that he bring them because I know I wont be able to eat that lol

Not sure but with the gas prices its probably not cheap! lol  but your more than welcome anytime!

We haven't decided yet, we may go to Buca di Beppo for dinner.  I can't tolerate ham any more and we don't feel like cooking a formal dinner for just the two of us.  Besides, it gives us an excuse to eat out! Kix

Ham, candied yams, mashed potatoes and gravy, yeast rolls, fruit salad, maybe green bean casserole Basically, a rehashing of Christmas dinner. I'm not really in the mood for the yams or fruit salad, but I am definitely ready for the ham and mashed potatoes.  I get mashed potatoes maybe 3 or 4 times per year, and this is one of those times.  Yuuummm!

DANG IT YALL,         JUST READING THIS IS MAKING ME HUNGRY... WE HAVE DECIDED THOUGH THAT WE ARENT EATTING OUT SO WHEN I FIND OUT THE MENU I WILL POST... I HOPE ITS AS GOOD AS YALLS MENU... UGH.... We spend our day visiting everyone to make them all happy.. So, my mother is cooking this year.. Ham (for everyone else, I'm too afraid to try it), a small turkey breast with me in mind, taters, veggies.. Then off to my Brother & SIL's for dessert. They don't try to accomodate me, so my DH will eat mine and I'll hang out and watch TV wishing I was home..

My family is in Savannah and we aren't going to spend Easter with them this year so I think I'll just treat it like any other night. It's hard cooking for one extremely picky child, a grown man that eats like a horse, and 11 yr old that would eat you if you stood still long enough and a 5 yr old that is slightly picky and then there's me..can't eat much so dinners for us are interesting to say the least. I just cook and see where it goes. I try to give them a chance to say what they want and I usually get several different choices..lol. I love to cook and try different spices and sauces. My sister gets so mad she likes to get my recipes but I Never write them down HAVE A GREAT EASTER EVERYONE!! hugs, Jamie
