Your favorite post-op recipe

Someone on another board asked for my sweet-potato chili recipe so I typed it all out for her.  While I had it typed out I thought I would copy it over here too in case anyone was interested.    What about you?   Any post-op recipes to share? Actually I don't really use a recipe, I just throw together stuff for a HUGE pot of chili and then freeze out individual portions which usually last my husband and I a month or two having it for lunch once or twice a week.  Its really high in veggies and very healthy, packed with protein and fiber, low fat. Here's my list of ingredients (approximations) - add or remove any ingredient or modify for your tastes 1 lb ground turkey 1 lb lean ground beef 1 can pinto beans rinsed 1 can kidney beans rinsed 1 can canneloni beans rinsed 1 can sweet corn 1 can stewed whole tomatoes, quartered, save the juice 1 onion chopped 1 cup roasted green chiles chopped (can buy frozen roasted green chiles in a lot of places) 1 cup chopped carrots 2 medium-large sweet potatoes peeled and chopped into 1 inch cubes 1 large baking potato peeled and chopped into 1 inch cubes 1 red bell pepper chopped 1 green bell pepper chopped 1/2c chili powder (quality red chili powder really makes all the difference) 2 tbsp dark sweet paprika 1 tbsp cayenne powder 2 tbsp garlic powder 2 tbsp tomato bouillion 1/2 tsp cumin powder 2-4 cups of water, beef or veggie broth, or tomato juice salt and pepper to taste Start by lightly cooking/browning the meat in your largest stew pot.  Add the carrots, onions, and bell pepper and cook lightly for a few minutes.  Add all of the powdered spices and allow them to heat through to release their fragrances and flavors.  Then add the potatoes and sweet potatoes and enough liquid to barely cover them - water, broth, veggie broth, tomato juice, v-8 - any of them work well.   Cook on medium high until potatoes are tender, then turn down the heat and add the beans, corn, tomatoes and canned liquid from the tomatoes and corn.  Add more water if needed - cook for an additional 15 minutes or more to allow everything to heat through and for flavors to meld.  Serve with cheese if you wish, and enjoy :)

That sounds really tasty!  I have a couple of recipes that I can post later, I'll have to get them from the ktichen.  One is what I call "Fart Stew" that has tons of beans in it, and the other is a chili mac that you can serve without the mac if you want to keep it lower in carbs.  I also have a salmon salad recipe that would work for new post-ops. Yum!  Sounds super good!  I'll have to try it for my husband - he has been eating so bad lately, maybe a veggie-packed breakfast would make him feel better because the junk has made him feel terrible (of course).  I've made a lot of omelets since surgery, they always sit well too.
