Crock Pot Chicken Fajita Recipe - yummy!

Crock Pot Chicken Fajitas

4 boneless skinless chicken breasts, or 2-3 cans chicken breast 
1 package Taco seasoning
1 onion chopped
2 bell peppers (any color), sliced thin
1 can FF Refried beans
1 jar salsa
1 can diced tomatoes (I use Rotel for more kick)
1 can Black beans, rinsed and drained
Toppings Ideas - Shredded cheese
Sour cream
Guacamole

Layer in order in crock pot, smooth refried beans out before adding salsa. If you don't want it as juicy drain the tomatoes.

Cook on low 6-8 hours. Top with cheese and anything else you want. Enjoy!

My husband loves to makes burritos out of this, I eat it without tortillas.

I ran the numbers on nutritional information for this recipe-- for the entire recipe it has 1922 calories and 192 grams of protein.  Obviously this will vary depending on the brand of salsa, beans, etc that you use and this was assuming that each chicken breast was 4 ounces  which may be too light.  Also cheese, sour cream, guac...will add to it. Hope that helps!

Hey Jan that does sound good!    Do you cut the chicken up when you put it in or after its cooked? and I bet it would be good over fresh greens salad like nice crispy romaine.  Estelle

I've done it with both whole boneless chicken breasts and the canned chicken, I actually prefer the canned. Next time I'll try it with diced or chuncked chicken breasts. I guess as long as it's boneless and skinless you could use any cut that you like.

Well can you say YUM  O  in the words of Rachel Ray lol    I used cut up chicken even my DH was in taco heaven, I made his with soft shell tacos and I ate mine with no shell and some fresh tomatoes and I scoop of sour cream on top was delicious,   Thanks i'll make this alot!    Estelle
