I actually add up the total for all the ingredients for the entire recipe - for instance 1 lb ground turkey, 1 can pinto beans... etc. Then I divide the total out into 4 oz servings - its not completely accurate because I have to guess how many 4 oz servings you can get from a recipe, but I think it gives me a good rough estimate. I usually do this in fitday or on a spreadsheet.
White Chicken Chili
- 2 cans Navy Beans
- 3 cups chicken broth
- 1 clove garlic minced (I have just used garlic powder)
- 1 medium onion, chopped
- 1 can green chilis (4 oz)
- 1 teaspoon ground cumin
- 3/4 teaspoon dried oregano
- 1/8 teaspoon ground cloves
- 1/8 teaspoon cayenne pepper
- 1/2 pound chicken breast cooked and cubed (bought roasted chicken is good to use here)
- salt and pepper to taste
Directions
- Saute onions and garlic in oil then add rest of ingredients.
- Simmer for 1 hour.
- Garnishes: sour cream, grated jack cheese, chips, green onions
