WLS FRIENDLY MUFFIN

This is a baked version of the previously posted One Minute Muffin which was microwaved.  The original was good but baked it is fantastic.  

A few minor adjustments:  I used half flax meal and half unflavored protein powder.  I also substituted Smart Balance Light for butter
.  Other than that, I did everything else and baked at 350 for 15 min. 

The result was a perfectly baked muffin in both texture and flavor.  
   Doubling the recipe filled two sections of a large size cupcake/ muffin pan. 

  Here is what you'll need (CAPS ARE MY ALTERATIONS):
  • 1 serving 2 tbsp bob's red mill organic ground brown flax
  • 1/2 serving 1/2 scoop (14g) GNC UNFLAVORED PROTEIN
  • 1 serving 1tbsp SMART BALANCE LIGHT
  • 1 large egg
  • 1/2 tsp baking powder
  •  

Recipe:


BAKED ALTERNATE VERSION OF THE MICROWAVED ONE MINUTE MUFFIN. 

INGREDIENTS:

1/8 cup ground flaxseed
1/2 SCOOP UNFLAVORED PROTEIN
1/2 t baking powder
[optional 1/4 t cinnamon or pumpkin pie spice, plus 1 t splenda]
1 T SMART BALANCE LIGHT
1 large egg


DIRECTIONS:

Melt the butter in a small microwave container (I use a 10 ounce pyrex thing).

Mix the dry stuff.

Crack the egg into the butter and mix with a fork - stir it up really good.

Add the dry stuff, blend until well mixed.

BAKE IN LARGE MUFFIN TIN SPRAYED WITH NO STICK SPRAY FOR 15 MINUTES.

Eat steaming hot... or let it cool a bit. Good as a sandwich, good with cheese inside, good cut in half with an egg in it, you get the idea. http://www.lowcarbfriends.com/...

I've got two bags of ground flax.  I'll be making your recipe and mine this week.  Hopefully I'll come out with a good sandwhich bread.
