Yummy Quick Protein Cake

I've seen several recipes for protein cakes and never tried it because I could not imagine what it would taste or look like considering the ingredients.  Well I had to find a way to feed this awful sweet tooth I've developed for desserts because its causing a delay in reaching goal.

Any who I tried it and liked it.  Below is the recipe I got from another forum and I've made modifications each time I've made it.  I get protein and a sugar free low carb dessert to boot! this will be my evening snac****il I get bored with desserts. Below is the recipe I got from another forum, there are many variations of this recipe on OH, this recipie tastes like a brownie.  Enjoy

             Protein cake
1 scoop protein powder (I used designer whey vanilla)
1 T unsweetened cocoa powder (I like special dark/dutch processed, but it doesn't truly matter)
1/2 tsp baking powder
1 1/2 T veg oil (or canola)  (I used olive oil)

Sweetener of your choice** (I used 1/8 tsp stevia extract, but you can use a liquid sweetener such as SF torani/davinci syrups, splenda, sweet n' low, etc.)  If you use splenda, start with 3 packets, may need 4-5 depending on personal tastes.  It's actually really yummy with the SF syrup, so try using those if you have them!

WATER** (It's going to be 1/8-1/4 cup based on the protein powder you use, and the sweetener you use...texture should be like brownie batter)  If you use a SF syrup...use less water.
 (use 1/8 cup and increase the water very gradually)

Optional add-ins: vanilla extract, instant coffee, salt (instant espresso, flax peanut butter, nuts, solid cream cheese, 1 T whole wheat flour, vanilla the sky is the limit)

Mix ingredients together...taste the batter, it's yummy.  :) Please taste the batter.  If the batter isn't good, the cake won't be either. 

pop in the microwave for 30-35 seconds (yes, that's it cooking time can be longer it depends on your microwave if you cook over 35 seconds add additional time in short increments).  Don't over-nuke or it will be dry and yucky. It poofs up a lot in the microwave!  Don't be alarmed

I used a 16 oz corning ware ramekin.  They are about $4 if you don't have one.  Otherwise, a really big mug or bowl will probably work well too.

Oh God bless you!!   My tolerance for sugar is high (29+grams, before I start dumping), so my sweet tooth is still an issue.  Like you, I have "episodes", but have been doing extremely better post-op.

Thx. Now I can eat cake without too much guilt.  Almost asked bout calories but it will depend on what brands used.  Duh.  We shall see.

A must try.  I like chocolate and cake and quick & easy.  Nuking these recipies just right is my issue. 

I've shared this recipe in the past.  Here it is again. 



I modified an easy brownie recipe to create this cake.  It came out well except for the frosting.  It was a litle stiff.  I'd try it with regular cream cheese spread or add a little smart balance light to it for texture. 

The recipe that follows is as I made it, flawed frosting and all.  I used special dark cocoa but natural cocoa will do just as well. 

If you try it let me know how it turned out.  If you can improve on it, please post your version. 

LOW CARB SUGAR FREE CHOCOLATE BROWNIE CAKE

Calories 132/ Protein 8g/ Carbs 8g, Net Carbs 6g/ Fats 8g

INGREDIENTS

 

3/4 cup smart balance light

3 large eggs

1 1/2 cups splenda

1/2 cup GNC unflavored protein powder (54g; 2 scoops=56g)

1/2 cup Hershey's unsweetened cocoa powder

1/4 cup Bob's Red Mill low carb bake mix

1/4 cup flax meal

1 tsp baking powder

2 tsps vanilla extract

DIRECTIONS:

 

PRE HEAT OVEN TO 350 DEGREES

MELT SMART BALANCE LIGHT

BEAT EGGS AND SPLENDA TOGETHER

MIX TOGETHERR REMAINING DRY INGREDIENTS

ADD VANILLA TO EGG MIXTURE

ADD DRY INGREDIENTS A LITTLE AT A TIME BEATING AFTER EACH ADDITION

ADD COOLED MELTED SMART BALANCE LIGHT A LITTLE AT A TIME BEATING AFTER EACH ADDITION

SPRAY 11"x7" PAN WITH NO STICK SPRAY

POUR BATTER INTO PAN

BAKE APPROX 20 MIN UNTIL TOOTH PICK COMES OUT CLEAN AND CAKE BEGINS TO PULL AWAY FROM THE SIDES OF THE PAN.

 

FROSTING

 

2 oz fat free cream cheese

1 tbsp Hershey's unsweetened cocoa powder

1 tbsp splenda

1/4 tsps vanilla extract

LET CREAM CHEESE SOFTEN AT ROOM TEMPERATURE

MIX ALL INGREDIENTS

SPREAD ON COOLED CAKE

CUT INTO 12 SQUARES
