Flaxseed Almond Meal Pancakes, Low Carb, Low Fat, Yummy

Flaxseed Almond Meal Pancakes
1 cup Egg Beaters (I use Ready Egg by Nulaid @ Trader Joe's)
1/2 cup water
2 tbsp vanilla extract
1 cup ground almond meal (you can find it @ Trader Joe's called Just Almond Meal)
1/2 cup ground flaxseed meal (you can find it @ Trader Joe's)
1/2 cup Splenda
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt (just shake in to taste)
Mix all ingredients in a bowl (with a fork to get out the lumps).
Spoon out 2 Tbsps for each pancake. You can make them any size you want but the serving size is two table spoons and it makes a nice small pancake. I like to eat two. The recipe works just as well if you 1/2 it or double it. I always make more and just freeze them for the week. They freeze very well.
