Flaxseed Almond Meal Pancakes

1 cup Egg Beaters  (I use Ready Egg by Nulaid @ Trader Joe's)

1/2 cup water

2 tbsp vanilla extract

1 cup ground almond meal  (you can find it @ Trader Joe's called Just Almond Meal)

1/2 cup ground flaxseed meal (you can find it @ Trader Joe's)

1/2 cup Splenda

1 tsp baking powder

1 tsp baking soda

1/4 tsp salt (just shake in to taste)

Mix all ingredients in a bowl (with a fork to get out the lumps).

Spoon out 2 Tbsps for each pancake.  You can make them any size you want but the serving size is two table spoons and it makes a nice small pancake.  I like to eat two.  The recipe works just as well if you 1/2 it or double it.  I always make more and just freeze them for the week.  They freeze very well.

Here is the nutrition break down:

The WHOLE MIX nutrition break down (then you can just divide it by how many pancakes you make)

Whole Mix (then divide by how many pancakes you make to get the counts per pancake):

1080   Calories

78        Fat

36        Carbs (8 net Carbs—it has 28g of Fiber)

64        Protein

When you make 14 pancakes (nutrition per pancake):

5.5       Fat

2.5       Carbs (.05 net Carbs—it has about 2g of Fiber)

yummy I'd eat them for dinner if I felt like going to Trader Joe's but I'm feeling lazy :) I will make some blueberry ones and freeze them so that I can have them when I crave them.
