LV'N MY RNY. WORKING FOR ME BECAUSE I WORK FOR IT.
on 10/22/10 12:06 am
I have been really focused on my eating and i'm doing well. When I need sweets we have frozen yogurt, sugar free and it is delicious. I have been drinking 3 water bottles for 3 days now, and I will try to do 4 today.
I am really trying hard, eating is the hard part for me, but i'm trying.
Good staying focused. I luv frozen yogurt but it don't luv me back. I make my protein shake and pour it into the ice cream maker for a frozen treat.
Have you tried any of the rny friendly recipes out there? I've checked out egg face but I'm working on my own sweets. Baking is not my forte but I'm almost there on a good protein muffin. If only I could come up with a sugar free protein sugar cookie, lol.

Ingredients:
1 cup peanut butter (I use crunchy)
1 cup Splenda sugar substitute
1 egg
Directions:
Preheat oven to 350F. Spray a cookie sheet w/ cooking spray. Mix the peanut butter, Splenda, and egg all together. Roll dough into walnut-sized balls and place 2 inches apart on the cookie sheet. (The original recipe says you get 20 half-dollar-sized cookies, but I usually get more like 12-14.)
Dip a fork in more Splenda and flatten the cookies crossways, like you do the usual peanut-butter cookie. Bake 9-10 minutes.
Divide the number of cookies by the number of carbs in the peanut butter to get a count per cookie.
