Today - I am in a chicken mood. Can't explain it, but the yard bird is callin me. I also want to do a yellow squash casserole. So - I think I might do some BBQ baked chicken. Whatever it is - it won't be too labor intensive - I's tired today boss!!! LMAO

No cooking for me today but that's nothing surprising, lol. This time its because I cooked yesterday, now that's a surprise.
I made a Szechwan seasoned ground turkey using a seasoning packet from Sun Bird,garlic teriaki sauce, an onion and a couple cloves of garlic. It was great warm over a salad.
Also, I did a chicken and turkey meatloaf topped with my tomato sauce recipe (not so secret ingredient is a good cabernet sauvignon) with roasted peppers.

i was at "chuch" all day "on yesterday" it was Women's Day...so there was plenty of the church fare to go around...
it was all good ........except those collards. i think i know what sista brought them in...and she's known for being a great cook...but she really messed those thangs up. (i can about eat anything...so they were truly bad if i couldn't eat'em.)
(LORD bless the woman, whoever it was, who brought in that cheesy broccoli casserole. and also bless the woman who brought in the....................................collards.)

My recipes are gonna be a lil disappointing - I don't measure and never have kept track of things well......
Squash casserole - I never did get it into the dish - BUT - basically it's squash, a yellow onion, butter, salt and sugar. Lil salt, mo sugar (splenda blend is what I use). Cut the squash and onion up into bite size pieces - don't add any water, the squash will cook down. Enough butter to kill the vitamins - add enough sugar to make it sweet but not sickly. Add bread crumbs for texture.
Brussel sprouts - even simpler. Cook about 6 cut up pieces of maple bacon till rendered, not crispy. Add brussel sprouts and enough butter to kill the vitamins, salt and pepper to taste - cover and simmer till the sprouts ain't hollerin no mo - and they are soft enough to cut with a fork.

T, my father was a french escoffier chef for 35+ years and he raised myself and my siblings in the kitchen our ENTIRE lives, no joke. We can all cook our asses off (and that's alot when we're talking about me) and at the end of the day..he always said..the simpler the better. I love the recipes. They sound soo good. Thank you. I will make them and let you know how they turned out. Smoooooch.
