Gas VS Charcoal Grills..........a poll
We have a charcoal smoker like this one:
I have a couple of tips for the charcoal users.
Use a chimney starter instead of lighter fluid. It makes the food taste so much better and you don't get that funky chemical odor.
If you don't want to buy a wood chip smoker box like this one, make your own.
1. Fill an empty can with wood chips that have been soaked in water and drained.
2. Seal the top of can with a double layer of aluminum foil.
3. Poke a few holes in the foil.
4. Place the can directly on the hot coals just before placing food on the grill.

You know...my friend did grill some chicken breast on it...it had burn...and it just did not sit right with me. I don't like the burnt flavor. I was eating around it. I think I am using my grill for more leisure type cooking and not so much for the flavor. As long as its cooked throughly AND tastes good...I am all for NOT heating up the kitchen and a little more ease of cleaning. I do admire your grilling skill though...looks like a good time at your cookout JUST looking at the tools you use...plus thats is a nice looking smoker.
