Yes I AM cooking today!  LOL - a 'spin' on chicken spaghetti.... I'm using whole wheat rotini pasts instead of the thin noodles.  Other than that - no cooking for me!  There's still leftovers of other stuff.  This week will be a 'clear out' week - whatever ain't ate up by Friday will be thrown out!

About to ATTEMPT to chill for the day - I say attempt because I bought a book about kettlebell workouts and it's my new porn lol - I will more than likely be practicing form and execution of several moves I saw in there.  It's got a workout plan too -   I feel some serious work coming on!!!!

I Need to re-hire my crockpot. I want some really soft meat that melts in your mouth, but I don't know what kind of meat. And then I want something that has a lot of cheese in the recipe, but I don't know what that is.

Bought my son a used wagon yesterday, so I can pull him around when I go walking on Abilene Christian University campus. Gotta start getting my walk back on. I missed it so badly.

So the bottom line is, I guess I will grab a protein shake and Daniel will have to tell me what he wants, cuz I am not feeling very creative today.

Chicken drumsticks, chicken meatloaf and chicken livers. 

Everything goes in the oven together until done.  Good and easy!  

Of course I will dine vicariously through this thread as usual.

NO COOKING!! Cooked last night 4 baby boy. Steak, mushrooms, and onions. Yellow rice. Broccoli. I did the steak w/o gravy just added a little beef broth @ the end kinda like au jouis (sp) Turned out pretty good.  He will prob eat that today and tomorrow.

He and I are off to a cinco de mayo celebration. He also had a looooonnng playdate yesterday. And me on very little calories and gym...can u say...TIRED???

Safe to say last week was a week full of poor choices and I'm starting fresh today. Looking for inspiration from all of you guys.

The only thing I can think of making off the top of my head is chicken taco salad, made with shredded chicken breast.

I also wanna put a roast in the slow cooker so I can have something healthy to take with me for lunch tomorrow. I'll probably also roast some potatoes and green beans too.

Hmmmmmm..........

How smothered chicken breasts? Season and pan sear, then put in a casserole dish, cover with cream of mushroom (or other cream soup) and bake for 45 min at 350.  Make some brown rice, and that's a good couple of dinners during the week.

on the veggies - do you like aparagus?  if so, buy some fresh, trim the bottom ends and put in a foil packet - drizzle with a lil olive oil and salt and pepper - put a few slivers of fresh garlic in and bake along with the chicken....... YUMMO!!
