Ummm - do I need to just stop posting these mofos? LOL!
So what are yall NOT cooking THIS dayum week anyway???? I'm going to buy a rotesserie chicken at WalMart, beef up some canned greens and cook some yellow squash and onions. I might also make tuna and egg salad - need a quick filler for the week.
Somebody BEST be cookin this weekend - yall need to get back on track!

Don't stop posting, cuz a girl like me gets ideas from the rest of the 'regular' cooking community. I never have any cooking ideas.

I ain't got a clue what I'm gonna eat today. Got some catfish nuggets in the freezer. Might end up doing something with chicken. I'm thinkin bout them chicken fahita cuts in the freezer and that alfredo sauce. Might just pick up a package of fetuccini and call it a meal. I'll work the excess carbs off in the morn.
Now you know I rely on my cyber meal every Sunday. I must say my BAF folks let me down for Easter. I was expecting a smrogasboard.
I broiled some chicken livers for breakfast. That's it. It will likely be a take out off the buffet at Shoney's. That can feed me all day for two to three days.

I'm cooking chicken sausage, mac & cheese and veggies for dinner.
For lunch, I'll have some chicken salad. My recipe is different and I'll gladly share:
Canned Chicken - Two Cans
Low Fat Cream Cheese - softened
Fresh Cilantro - handful
Fresh Ginger Root - small piece
Celery - two stalks
Green Onions/Scallions - 1/4 bunch
Lime
Drain chicken and mix with cream cheese. Finely chop veggies and add to chicken mixture. Add juice from the lime.
Chill for one hour and enjoy!

please DO NOT, i repeat DO NOT stop the sunday dinner post. this post is the ONLY reason i log onto BAF on sundays! sad, i know. anyway, i typically don't cook on sundays, and that includes today. however, on saturdays i try to do some thangs. i slow cooked a beef roast overnight and added some veggies. i also fixed some mac and cheese and cornbread. that meal is a little too heavy for me, so for my palate, i fixed some brown & wild rice, asparagus, & mushrooms topped with some parmesean cheese....OH.MY.DAYUM..it was GOOD!
