Original recipie
1 box jiffy mix
1 stick butter
8 oz sour cream
1 can whole kernel corn
1 can creamed corn
1/4 cup milk
Low fat recipie
1 box jiffy mix
1/2 stick smart balance
8 oz light sour cream
1 can whole kernel corn
1 can creamed corn
1/2 cup 1% milk
Mix all ingredients and put in an ungreased baking dish @ 350 degrees for 1 hour and 10 minutes unitl golden brown aound edges and center is firm to touch.

Mayn - I had to take a vacation from the world - I'm in a mental funk for real - it's been a ****ty weekend for me. No one cause for it, but I have done the bear in the cave thing - babygirl is at my mom's for the weekend and I have been parked on the sofa or in my bed.
Didn't get up till 10 this morning and had a hangover from hell - took a couple hours to veg and am now just in from the gym....that's right - mental funk or not, I'm pumping my iron. And no ****** **** - I gotta add more weight - did my 180 leg press and ain't feel enough burn. Moving to 200 this week. And I'm going to focus on upper body for the next three weeks - I want to see if I can build more tone.
Needless to say - I ain't cookin A DAMN THING. I made a plate for myself of leftovers, ate two bites and quit this morning so I am drinking a protein shake and about to go soak in my tub and listen to some jazz.
That is all. I'll snap out of it tomorrow - today, I will wallow.
