Sunday Dinner - I'm ON it today!!!

Hey Fam!  What's good?  Hopefully yall will still respond to posts about FOOD - you know you want to!!!! lol

I am back on the cooking ball today - my fridge is empty and payday ain't till Friday - we gotta stretch it to make it this week! 

I'm doing a rack and a half of babyback ribs - in the oven, steamed with apple juice then finished off with cattleman's sauce, then baked chicken breasts, seasoned and pan seared, then smothered in cream of chicken and baked to finish.  Also - turkey meatloaf w/italian seasoning - I'll mix the ground turkey with italian sausage for this one.

Veggies - green beans, peas and mashed potatoes.  I will also do some stuffing to go with the baked chicken breasts - baby girl will have some seriously good choices this week!  No Sonic, BK, Mickey 's or anything else!  She will have to walk fast by the fridge and play like that's the drive thru........

So what you got going fam???!!!!!

I was trying to wait and post under my new account but I see that OH is taking their dayum time about approving my first  thread post using that account. I am keeping this account just for myself. i like to go back and read my blog. Deleted all the pics though. I guess I will eventually transfer my blog to a word document and update offline. Terminate this account when I get to that point.

Your chicken breast sounds real good. I am also cooking smothered chicken and gravy in the crock pot. I am heating up some pinto beans and smoked turkey that I cooked yesterday. Will throw a salad in the mix. I really don't feel like cooking today. Heading to the rec center in a few.

The girls and I went skating last night....gurlll that was really fun. I busted my ass a couple of times until I got the hand of it again....but then it was on...I was even doing my little hip dance on those skates. I actually think I am not going to need lessons...sort of like riding a bike. I just need to practice going backwards.  The good part about the whole experience is that I did NOT have a problem getting my ass up afterwards.

I tell...you losing weight is such a trip because so far two people have not only complimented me on my wieght loss but also they guessed that I must be a size 14.  In a couple of inches I will be comfortable in a 14 BUT I still see a 18-20 heyl...even 26 when I look in the mirror.  This part is tripping me out. I guess because I was not making a conscience effort before..I never noticed this disparity in body image.

Any who...I know I got off on a tangent but I figure I would make the most of this post while I am here.....dayum...OH is messing up my flow. I know some folks are patting the heyl outta OH's back for that one. LOL! LOL! LOL!

Today, i'm doing a pot roast with carrots, celery, red potatoes, onions and seasoning w/ rosemary in my crock pot - also plan to make some lima beans & corn.  Wanted to do some cornbread but don't think I will - have a enough carbs with the beans & potatoes.  Anyways hope everyone has a blessed day.

hey Deejay!!!  yea - it's me - had to go incognegro till I figure this whole searchablity thing out.  LOL!!!

I have never tried rosemary as a seasoning for beef - that's really interesting.  I stole the baby back ribs from you last weekend - they were such a hit - I gott do em again this weekend!  LOL

Glad you enjoyed  your ribs, mine's were the bomb too girl - I had leftovers all the way up until last Wednesday - made a rib sammich on a whole wheat sub roll with pepper jack cheese - girrrrl da bomb for true!!  Yea i purchased a package of veggies yesterday at krogers, celery, carrots, onions and a few sprigs of rosemary - only $2.51 (they all came together) I really didn't want to purchase the veggies separately so this was a deal for me.  The rosemary actually turned out really well, my apt is smelling ghetto fab up in this piece today lol.    Just got home from church and i'm starving so I'm about to destroy this pot roast.  Holla

 I am sticking to my new year's resolution to cook more and eat out less, therefore saving money. So, I planned out some meals and even did a little experimenting. I made meatballs in marinara sauce. Yeah, I got ground turkey, seasoned and rolled the meatballs and cooked them. The sauce is from the jar (I ain't that good), but I did add some diced tomatoes to the pot. I also experimented with some spinach. I was getting tired of broccoli, so I sauteed some diced onions in light olive oil and added the cut spinach and seasoned it up real good. DAMN!!! I outdid myself.

I also made some baked chicken thighs (because baked breast gets too dry and I get a grouchy pouchy after I eat it). I am also planning to roast some red baby potatoes. Sadly, I do have my broccoli standby, because I wasn't sure how the sauteed spinach would turn out and I didn't want to be without a green veggie. So, all of this food will carry me through the week for lunch and dinner. I may end up freezing some of the meatballs and sauce, because I don't see me eating all of it.

here's a tip on the baked chicken breasts - if you pan sear them to brown them, then bake them covered and smothered in cream of chicken soup - they stay really juicy and very flavored. 

I had the same issue with them - started cooking them this way and they work out very well for me.

Ooohh I'm gonna have to try this for chicken-I love it, but it doesn't love my band back. I've been about comfort food lately and I plan to make cheesy broccoli soup this afternoon after work.
