Sunday Dinner!!!!!

Happy New Year BAF!!!!!

I had a great holiday - and I don't have to go back to work till WEDNESDAY!!!!!  Yahhoooooo!!!!

I'm about to get suited up and hit the gym - I still have leftovers out the yahoo - made blackeyed peas for New Year's, so that's already made.  I will make a pan of cornbread later today.

Other than that.....ummmm - I'm totally NOT motivated!  I don't feel like cooking a THING and probably won't unless a real serious bug bites me on the ass and I get a serious taste for something. 

Oh well - maybe NEXT Sunday I'll get around to actually cooking something.....don't hold your breath....LMAO! 

I don't just have issues, I have subscriptions!  I'm saving on the newsstand price.......

No Sunday off from the gym for you I see.  I'v been looking for an excuse but now you've shamed me into gtting off my sagging @$$

I'm cooking veg only today.  Stocked up on mushrooms, cauliflower, spinach, eggplant  and turnips.  I'll be doing mock potato salad and mock rice with the cauliflower, vegetarian lasagna with the eggplant and mushrooms, sauteed spinach and garlic, and mashed turnips.  All quick, easy, low calorie, and most of all savory.

I started back at the gym this week myself and it was hard but I am more than motivated to kick it up a notch lol - did cardio on the treadmill and stepper and took a step class this week - plan to go hard next week as well.  Today i had leftovers from Friday - did an appetizer night saucy meatballs, buffalo chicken dip and saturday i made taco salad with ground turkey - so that is what me and my daughter had today - no cooking just heating up in the microwave.    Hope everyone has a blessed week - getting ready to sprawl out on my couch and watch dvd's and lifetime till bedtime - Have a good one everybody

Keep dragging your butt in - you will get the hang of it soon enough.  After my first week, I was up before my 4:30am alarm all on my own - so no excuses!!!!!

Well let's see...I made Jambalaya in the crock pot on Friday (basically it's gumbo without the crab cause this recipe you serve over rice if you choose).  I am actually trying out different grains and someone told me about quinoa so I made a pot of that and I'm ready!!  I'll be serving up my jambalaya for the week or at least until I get tired of it and freeze the rest!!

I don't know what got into me today.  I was quite content to lay on the couch.  We went to early service at church and then to Cheesecake Factory.  I came home and got into position on the couch.  I got up and thought to myself that I ought to cook since the kids were leaving for school in the morning.  They appreciated one last hot meal.  They get weary of cafeteria food at school.  But hey -- at least they have open access meal plans.  There are kids running around there that don't know where their next meal is coming from!
