The friend asked me to proofread her paper and to give her my completed work from the course that I took that she's now taking.

In the original post you didn’t tell us that your friend had asked for your previous class work – only that you had proofed her goal statement. Thanks for providing the additional information. I’d tell her that I don’t give my notes away; I keep them for reference.
Question: Are you allowing your experiences with the user study partner to shade your perceptions of your friend or she really a sneaky-jealous-desperate-for-a-degree woman who would claim your work as her own?
If that's kind of person you believe her to be it doesn't sound like much of a friendship. I'd be watchful.
Honestly, I'm being watchful of her. She has said and done somethings to me that prevented me from an occupational seat in her company. The interviewee contacted me and let me know what she did. So, that alone was shading my perceptions of her however I was reflecting back on things that we have done on each other and this just didn't sit right with me.

If you have professional connections or mutual acquaintances, disengaging from this woman will be tricky, but I think you know that you need to do it.
