Goin backwards
What's 'coming off the protein train' amounted to for you? What should happen is you basically continue to stay away from complex carbs (processed foods, etc) and incorporate some simple carbs (whole grains and such)
Depending on what you're eating and when, you may be throwing your body's glycemic index out of whack, causing your body to store fat. It could also be water weight if there's a lot of sodium or if you're not drinking enough water.
Hard to tell from what you've said - so i need a lil more info.

Yesterday I had
B-Deli ham and cheese
S- half cliff protein bar loaded 30g sugar but 20g protein very good though
D- i boiled egg, 1 wheat toast, 4 slices of bacon,
s- other half of protein bar
also had 2 saltine crackers and tlb peanut butter
I got in about 48 oz water. I know I fail n this area.
My exercise has slowed down because of my crazy ass schedule. That might have alot to do with it as well. I work 2 jobs respiratory therapy, and in nursing school. My sleep is all out of wack and I do have some fluid around my ankles. But DAMN 7 lbs in a few days.
The day before I had an Arbys beef and cheddar. That did not help. Ate half then and half later also had a few fries. There you go complex carbs!!!!!!! Boy even still, The pounds come back on quick as hell. Blast Away lol! UR right my glycemic index is proly way off
just cause it's a protein bar don't mean it's gonna do you good. Lots of those bars have sugar - even with the 20g of protein, it's not the right balance.
Why are you eating the bars? Is it convienence? I used to eat them like candy - but have completely stopped - I snack on bacon, cheese sticks, dark chocolate when I have a total craving. I try to keep the carbs under 15g per serving.
How long have you been eating this menu? Looks kinda boring - which leads to looking for things to eat and ending up with bad choices.
and anything less than 64 oz water in a day - not good enough - you MUST get that in. So - gimme some feedback and let's work this out!

Get my protein in at least 60g, eat more fruit (Berry's), get my 64oz's of water in. That should do it. I also have to come up with some ways I can get some variety in my food. I don't have much time to put thought into it, so that's why I keep it simple.
I do a Sunday dinner post every week - I steal a lot of ideas there - check it out!

There is probably some water there but without a body water % scale you can't be sure.
I have to agree with Ms Mack. When you add carbs stick to produce and low sugar fruits like berries. Also look for higher fiber foods.
I can't really speak for grains since I don't do them much. When I do starchs I look for low carb versions with 6g or less net carbs as in dreamfields pasta or mission low carb tortillas.
Don't skimp on the water. Keep it high like you did on the protein train.
