Sunday Dinner - holla at cha girl!!!!
So - I have decided on the following:
-- chicken stirfy
-- hot n spicy stir fried broccoli w/brown rice
-- boiled, seasoned chicken to go to work for my daily salads
-- collard greens w/smoked turkey necks
-- cornbread
I can't think of anything else that 'hits' me right, so I might steal an idea or two from you that respond - but that's my plan so far............ so what you got????

This morning I was up at 6:00, doing my morning walk, and decided to BBQ some ribs today since my son is coming over. So todays menu is:
BBQ Ribs
Turnip Greens
Mashed Potatoes (for my son)
Smashe Califlower (it is a low-carb recipe that I've been waiting to try)

The califlower was not too bad. When I make it again I will add some garlic and other spices.
Cauliflower Mash:
3 cups cauliflower (approx. 1 head)
1/2 cup heavy whipping cream
1/2 stick butter
salt and pepper to taste
4 slices American cheese (approx. 2 oz.)
1 tsp. paprika
Cauliflower Mash Preparation:(6 half cup servings)
Trim hard stems and leaves from cauliflower. Cut flowerets from stem (discard stem) and place in rolling boil of salted water for 15 minutes until tender. DRAIN WELL.
Place hot cauliflower in food processor with large blade. Pulse while adding butter and heavy cream. Add salt and pepper to taste. Spoon mash into 1-quart oven-proof casserole dish and cover with 4 slices of American cheese. Dash top of casserole with paprika. Place in oven with meatloaf for last 5 minutes and serve hot.
Yields 6 servings with two pieces of meatloaf and one half cup of cauliflower mash - approximately 8 net carbs per serving
