Heat 1 tablespoon of extra virgin olive oil. Add sliced green peppers, poplano peppers and red onions. Season with salt and pepper for 5 - 10 minutes until they soften and begin to caramelize. Add 1/2 cup of beer (to get those veggies tipsy), some smoked chipotle hot sauce and coo****il veggies are tender, maybe another 5 minutes. Drunken onions/peppers for your fajitas. My family is not crazy about guacamole so it is a nice alternative to add to the combo.
