It is pork and they cook up soooo tender every single time. I usually either bake or cook them on top of the stove. They are also good on the grill. Some will have bones in them some won't and if they do have bones in them they fall right out because of the tenderness. Ask your meat market person, I am certain they can explain and show you this particular meat.
ETA: They are meatier than regular ribs.
