I'm cooking for one today which means I'll have leftovers all week; but I'm having pork roast, fried cabbage, and green beans with new potatoes.

LOL.  My pleasure.

Fry 3 or 4 slices of bacon in a large skillet.  Once done, remove the bacon, but leave in enough oil to equal 2 or 3 tablespoons.  While the skillet is still hot, add 1 medium head of shredded cabbage, or 1 bag of slaw mix from the prepared salad section of your grocery store.  Stir the cabbage in the oil, add salt and pepper, and a little sugar.

Stir periodically until it's the consistency you like (I prefer the cabbage to be a little firm).  A few minutes before it's done, crumble the bacon and mix it in.  That's it.  Quick and easy.

You can use turkey bacon to reduce the amount of fat.

You'll be aiight - just get back to normal - quick fixes usually don't last, you know how you got here, just dust yourself off and regain your senses.
