Pancakes???

Does anyone have a recipe for a good protein pancake?

I tried one from the RNY board and while it was okay (with awesome protein values for pancakes), I wouldn't spend the time making it again. For anyone who wants to know heres the recipe:

1/4 cup greek yogurt
2 egg whites
2 tbsp whole wheat flour
2 packets of splenda
dash of cinnamon

Personally, I think I needed to add more cinnamon and some nutmeg. Also, I wasn't thrilled because I like my pancakes nice and fluffy...there is NO fluff to these, just flat. I was even surprised that my SF maple syrup was yummy (was not made with sugar alcohol as they make me queezy and taste horrible).

So anyone got a recipe for something delicious?

Fiber One has a good Pancake mix, quick and easy, just add water and cook.

Actually I am prob all wrong in thinking this. But do you think I could get away with the complete Aunt Jemeiahs pancake mix and add a scoop of protein powder? Or would the carbs put me in a coma?

It depends on your body. You can purchase whole grain pancake mix too.

Damn - you mean I am NOT supposed to get a short stack from IHOP and spend all day eating it bit by bit????

lol. maybe YOU can but at almost 6 weeks out I am not going there for their high carbed low protein stacks of goodness.

Maybe in another 6-8 weeks I will indulge in their heaven sent harvest oats and grain..mmmm. But right now I need protein.
