I have been a cooking fool lately trying and tweaking recipes that fit into what I like.


What are you doing today that sets you up for success this week??

I have been hooked on Thai/Asian type dishes.

So I'm a marinating nut..

Whatever protein I cook I make sure I have different sides throughout out the week.  Loving the tupperwear I just freeze and heat.  I make sure I always have water in my car and in my desk at work just in case I have to run out!!

I keep vitamins with me at all times!!! What are somethings you find yourself doing to keep you on track???

Hey Candace - ummm - it's tupperware, not tubberware :)

As for me - I just cooked turkey meatloaf and chicken enchiladas, I still have chicken spaghetti left from last week and I will make another batch of salmon croquettes sometime this week, so that will keep things on and popping for me.  For sides, peas, corn and mashed potatoes and I am going to do a can of mixed greens so that I have variety.  I always try to cook two or three things on the weekend to have things very available to heat and go during the week.  I helps keep me on track and away from the fast food places.  

I don't just have issues, I have subscriptions!  I'm saving on the newsstand price.......

Huh?? Oh yeah lol

I swear you love some salmon croquettes!  I went out today and got all the ingredients for some just so my mom could make some... Love em!!!

LOL!  Yes I do love em - easy to make and VERY filling.  Plus, I like the idea of getting my omega 3s outta the way..... I can eat three of them and that's dinner, hands down - so they are too easy to pass up!

I am going to make red beans and rice with smoked turkey sausage and smoked turkey wings for flavoring for monday.  I made the typical sunday dinner today; chicken/mashed potatoes/gravy/corn on the cobb for the family.  I baked the chicken (stuffed it with lemon and garlic) and passed on the gravy.  I also made fresh lemonade with splenda and some fresh mint.  That was really good. 

Again, I struggle with the vitamins.  I went for a walk this morning because it was a beautiful day.

Love red beans and rice.. I was craving beans last week and picked up some black eyed peas for next sunday's dinner.

The mint sounds so refreshing!  I at times struggle with vitamins.  I just found that I need to just suck it up and take them lol...the longer I wait the more I don't want to take them!!!  You will work it out!

I'm sitting here trying to get my head right for the upcoming week.  I have had an upset stomach on and off this past week so I either haven't eaten enough, or have eaten too muchh .

This week I'm getting back to basics.

Gonna get all my water in, get in 60-80 grams of protein each day, limit carbs, and eliminate liquid calories.

Knowing what to do and actually doing it don't always go hand in hand forr me, but I'm working on it.
