Chicken Enchiladas w/spinach.....Mack style..... LOL!!!

Here's how I did it..........
Ingredients:
3 boneless, skinless chicken breasts
1 can black beans
.75 bag of fresh spinach
1 large can enchilada sauce
1 pack of Whole Wheat carb control Mission tortillas
1 chopped medium to large onion
salt, pepper, cumin, garlic powder, onion powder
1 bag shredded mexican cheese blend
Boil the chicken breasts in water seasoned with salt, pepper, cumin, garlic powder for 30 min. Remove from heat, drain and let cool. Shred with a fork.
In a deep skillet, put in chopped onions w/a dash of salt. When they start to sweat, add the spinach and toss until the spinach fully wilts. Add the black beans (drain them first). Add half to three quarters of the can of enchilada sauce, then the shredded chicken and season with onion, garlic powder, cumin and salt and pepper to taste. Let the mixutre simmer for 10 min. Remove from heat and let cool.
Take a shallow skillet and brown the tortillas in canola oil on each side (this brings out the flavor). Let the tortillas cool (about 5 min) then spoon the chicken mixture into the torillas and roll, then place seam side down in a pan. Top with the rest of the enchilda sauce and sprinkle the cheese over it liberally. Bake in the oven at 350 for about 20 min, or until the cheese browns on the top.

If you have more chicken mixture left over - it makes GREAT tacos too!

Okay ma, I hear ya, you doing ut real big up in here. I am definitely going to try this recipe and am bookmarking this page as well. Think I will put a dollop of reduced fat sour cream on it after it's done - whenever i eat any kind of mexican type dish i gotta have my sour cream lol. Anyways i didnt get a chance to finish my dinner today because i had to babysit for one of my girlfriends and now i am just too damn tired. I only made the green beans - plan to make the meatloaf on Monday. Anyways I am headed to bed to watch some lifetime - talk to ya later in the week.
