Brussell Sprouts

Brussel sprouts...however you spell them....are the DAYUM bomb!  I totally love them....

in an effort to eat more veggies.....and only one carb with our meals.....I am trying different veggies.....next on my list.....asparagus.......any tips how to cook it?  any other veggie dishes?

Thanks to Donna, I am still loving me some steamed squash and zucchini (however you spell it).....I do mix veggies.....broc and cauli......all types of greens, but my fav is a mix of turnips, collards, and mustards or kale......I do cabbage, bok choy....green beans.....I am interested in EGG PLANT....but really need to know what it taste like.....so help me out with any veggie....

Eggplant is very good - you can cook it several different ways - but here's my suggestion for a 'starter' dish:

Take one bottle spaghetti sauce
brown some meat (ground turkey or beef)
extra italian spices

Cut up one to one and a half eggplant into cubes.  Sautee the cubes w/cut up onion and olive oil and add it to the mix with the sauce and meat, add seasonings to taste - it's great alone or over pasta. 

ETA - WHOOPS - left out a step - throw it all in a casserole dish, top with parm cheese and bake for 20-30 min so the eggplant will cook all the way through.

That woman loved her some eggplant and tried effortless to get me to eat some....now I am curious and want to try it......Imma use your recipe.....can you tell me what it taste like? You know broc and brussell sprouts taste like cabbage...do does bok choy.....

hmm - can't really say that eggplant really tastes like anything else - it's more texture - kinda like a soft squash.

Chop it into little pieces put some oilive oil in the pan add some salt and pepper and cook them until they are tender they are so delicious and buttery tasting,  when they are done and you put them on your plate you can grind a little parm cheese on them  and Yum. 

Sometimes she will wrap them in bacon and put them in the oven and bake them, oh my god that is so good also. 

So much better than steamed or boiled.

It has so much more flavor than just boiling and steaming,  I still like it boiled and steamed but I love it this way.

Becca said you can also add bacon to the pan when you pan fry them also.  If your not into bacon leave it out.

...i ain't talking religion baby sis...but i will talk veggies...LOL.

gurl...i loves me some brussel sprouts.  i didn't even eat'um until i was in my 30's...(still a long time ago...lol.)

now...i loves me some asparagus too.  i didn't even eat'um until i was in my 40's...(had me some at red lobster on friday night)

i'll probably do EGG PLANT when i get in my 50's...(which is "right" around the corner...)
