Hey Doug,
While I was in East Texas visiting they eat Beefalo meet. Its a cross breed of a buffalo and a cow. I didn't taste it but it was all they could talk about.

Now in Houston they sell something called Turduchicken. Its a combination of all three: Turkey duck and chicken meet. Not by breeding but combining all the meats together. Again I'm not bold enough to try this as well........

Turduchicken is good eating if you eat it once. You'll eat,eat it again.  Good Eating

I actually didn't even know you could eat a muskrat....

Not the pig ears...LOL.  I remember visiting my blind aunt who lived waaaaayyyyy out in the country and she cooked us some pig ears for breakfast...I looked at them and was like..."Are we 'supposed' to eat this...LOL.  (That was the first and last time I had pig ears.  I think I've had pig tails a few more times...at least I remember 'a little' more meat on those...LOL.)

YOU ARE COUNTRY VIRTLY!!!

Just add cornbread, tater salad, and collards to one of the meats listed and you will have a mighty fine meal. I haven't the rat in years.
