Hey Birdman,
As a child I've eaten chitterlings.  My grandmother tried to get me to eat pigeon (I didn't eat for a week waiting for that crap to go away). lol
and frog legs (tastes like chicken but eeewww and goat (West Indian It's required).
I live in NYC and I've eaten Chinese food so I can't say that I haven't eaten rat cat or dog.  lol.  I stopped eating meat from the Chinese restaurants years ago.  .

My President has eaten tiger, I'd like to try that!

I have to say this post is right up my alley.  I love trying new things and the stranger the better.  I have a few of the things you listed.  But, horse is a staple on my list.  I need all the iron I can get.

This weekend when we were away I had Andouille Sasauge which is basically chitterlings.  My husband fell out and was like you turn your nose up to steak but, you will eat pig a$$......

Needless to say lolol he is right.  can't stand steak but I killed that sausage.
