TFC , What meat are you putting in your crock pot and what are you adding in there with it? Celery , carrots will always add flavor and moisture to your CP foods. Click on the link that's inspire has in the post. I also visit all recipes i really like that site because you can play with the recipes and make it work for you (take out the fatty ingredients..lol)

I have tried chicken, oxtails, stew meat chunks, and short rids. They have never turned out mouthwatering tender & delicious to me. I may be adding to much liquid (water/broth). The end product usually is very watering looking. I usuallu add potatoes and onions to dish. Doesn't seem to help. Maybe I can only cook in the oven or on the stove top.
Next time I will try making dish with little or no liquid and see how it turns out. I have never made chili in the crock pot, unless you mean opening a can of beans and adding ground meat. If so, then yes.
But that's not how my momma used to make chili.
