read Ms D posts about the daily shout out ....I find them helpful because they give me good/healthy menu ideals
I used to do baked ricotta & sauce..its a nice "italian" feel. If you make lasgna or baked ziti or something for the fam save a little of the ricotta/egg mixture and bake it in a small dish with a little sauce (optional--and watch the sugars and acidity depending on what your NUT says)...it's a nice substitute without the pasta. I also did a lot of canned hormel chili (no beans) and corned beef hash (or if u dont want hash you can do the regular canned corned beef)---they are pretty cheap and you can eat on them a few times while still making a regular meal for the family.
