Making spaghetti today (quick & easy), don't feel like doing much, back to work tomorrow for me.

I was JUST thinking about this.... hubby and I are suppose to go bowling tonight. So I'm thinking of doing turkey burgers but I can't get over the burger and fries thing so I never know what else to cook with the burger I may do some fruit and SF chocolate pudding with lowfat cool whip and a bannana for dessert after we get back from bowling. I have NO idea what I'm going to do for either breakfast or lunch.

Morning MM!

Cranberry pork roast made in the crock pot, sided with new potatoes and green beans.

I made enough, so the fam will be eating on this tomorrow too.

This morning I ate left over calamari.

For this evening I made spinach, broccoli and potato early this morning.  I have some left over sirloin steak in freezer that I cut into strips and plan to heat up for dinner or a late lunch.

Leftover squid for breakfast???  hmmmm.

I had a veggie omlette w/bacon.... wait... guess it wasn't veggie then... LOL!!!

Hi MM.  After being on vacation for nearly two weeks...I am not cooking nothing today.  I plan to CHILL  for my last day off.  My son and I will feast on leftovers or make frito pies.  This will be my last day to splurge because it is back down to business tomorrow.  Please send me or post the recipe for the low carb shepherd pie.  Thanks.

hey faith!!!  ^5 on that chillin part - ME too!!!  LOL  MAN!!!  I got two more days so I am really trying NOT to do a whole lotta stuff......

as for the sheperd's pie - here's how I did it:
1 large pkg ground turkey (1.5 lbs I think)
1 small bag frozen mixed veggies
1 med onion
4 cloves garlic
1 half pack fresh mushrooms (precut)
1 package onion gravy mix
1 small package cauliflower
3 med sized turnips
2 parsnips
1 package colby and cheedar grated cheese
butter
cream cheese

Cut the parsnips and turnips into cubes, put into a pot of water, boil till soft.  If you use frozen cauliflower, wait till halfway through on the parsnips and turnips - or everything will be too mushy.  Once cooked, drain and mash like potatoes w/butter and cream cheese to taste.


I cut the onions, garlic and mushrooms up and sauteed them - just to sweat the onions and get the garlic fuming.  I put that in a bowl and set it to the side.  Then I browned the turkey, seasoning with salt, pepper, garlic and onion powder.  About halfway through - I added the onion gravy seasoning.  Then add the mixed veggies. Do your final seasoning and put this mixture in a seperate bowl.

Now you have the two layers to the pie - get a casserole dish and put the meat in the bottom, do a layer of grated cheese then put the cauliflower mash on top, and put more cheese. 

Place in 350 degree oven for 30-45 min - DONE!!!!
