Taffy Apple salad
INGREDIENTS (Nutrition)
  • 1 tablespoon all-purpose flour
  • 1/2 cup white sugar
  • 1 egg yolk
  • 2 tablespoons cider vinegar
  • 1 (8 ounce) can crushed pineapple, drained with juice reserved
  • 4 large apples, cored and diced with peel
  • 2 cups unsalted peanuts
  • 1 (8 ounce) container frozen whipped topping, thawed

DIRECTIONS

  1. In a medium saucepan combine the flour, sugar, egg yolk, vinegar and reserved pineapple juice. Cook over medium heat until thick. Remove from heat and chill.
  2. in a large bowl combine the pineapple, apples, peanuts and chilled cooked mixture. Fold in whipped topping and chill for at least 1 hour before serving.

Hot Spiced cider 
 
INGREDIENTS (Nutrition)
  • 6 cups apple cider
  • 6 cups pineapple juice
  • 2 cinnamon sticks
  • 6 whole cloves
  • 6 whole allspice berries
  • 1 orange peel, cut into strips
  • 1 lemon peel, cut into strips

DIRECTIONS

  1. Pour the apple cider and maple syrup into a large stainless steel saucepan.
  2. Place the cinnamon sticks, cloves, allspice berries, orange peel and lemon peel in the center of a washed square of cheesecloth; fold up the sides of the cheesecloth to enclose the bundle, then tie it up with a length of kitchen string. Drop the spice bundle into the cider mixture.
  3. Place the saucepan over moderate heat for 5 to 10 minutes, or until the cider is very hot but not boiling.
  4. Remove the cider from the heat. Discard the spice bundle. Ladle the cider into big cups or mugs, adding a fresh
Or  you can run into Sprouts and buy their Mulling spice all mixed up for $1.25

 Pumpkin Dip

 1 container  cool whip
1 box Vanilla pudding
1 cup Pumpkin
1 t Pumpkin pie spice

 Mix all and  chill .. Serve with apple slices,  ginger snaps ,  Graham crackers .

**  think this is pretty close to Lisa's Recipe.?? I found it on all recipes.com

P.S. Scott"s  meatballs = Turkey Meatballs  from Trader Joes - Pretty darn good !!!

I think Scott is a pretty darn good cook. He sugar free chocolate cake frosting and cake batter were pretty good. Turkey Meatballs with light Merino sauce was also good. Way to go Scott !!!

Jeanna,
Let me clarify this recipe.

1 whole egg
6 cups of granny smith apples (I have used others and granny smith is what is needed)

Peanuts you add just before serving or they get soggy. (I use dry roasted salted peanuts)

The rest looks correct.  Enjoy everyone.  Sorry I didn't get it posted yet.
