Breaded Zucchini and Marinara Dipping Sauce

Serves 4

Ingredients
1 cup whole wheat bread crumbs
2 tablespoons grated Parmesan cheese
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon dried oregano
¼ teaspoon freshly ground black pepper
2 egg whites
1 tablespoon hot sauce
2 tablespoons whole wheat flour
2 medium zucchinis, sliced into 2 x ½-inch sticks
2 tablespoons olive oil
¼ teaspoon salt
1 cup jarred tomato sauce

Directions
Preheat the oven to 400 degrees F. Place the bread crumbs, Parmesan, garlic powder, onion powder, oregano, and pepper on a sheet of waxed paper. Mix the ingredients with your fingertips until well combined. Set aside. Mix the egg whites and hot sauce in a shallow dish. Place the flour on a sheet of waxed paper. Dip the zucchini in the flour, then in the egg whites, and then in the bread crumb mixture.

Heat two large ovenproof skillets over medium heat. Divide the oil between the two skillets. Add the breaded zucchini and cook 4 to 5 minutes, until the zucchini browns. Turn the zucchini and slide the skillets into the oven. Bake about 10 minutes or until the zucchini is tender. Sprinkle with salt and serve immediately with the sauce.
 
Nutritional Stats Per Serving (6 sticks): 168 calories, 7 g. protein, 18 g. carbohydrates, 8.7 g. fat (1.8 g. saturated), 2 mg. cholesterol, 3 g. fiber, 565 mg. sodium.

 

Chocolate Shake

Fast food shakes are super high in saturated fat, the kind that raises blood cholesterol. My version is a creamy, rich shake with avocado that’s high in monounsaturated fats, the good fat that will help you feel full without affecting cholesterol levels. And avocado happens to be rich in potassium and B6 as well.
 
Serves 2
 
Ingredients
1/2 ripe Hass avocado
2 tablespoons brown sugar
2 tablespoons cocoa powder
1 teaspoon vanilla extract
1/2 cup skim milk
 
Directions
Place all ingredients in a blender or food processor. Blend on high until smooth and serve over ice.
 
Nutritional Stats Per Serving (1 cup):  169 calories. 8 g protein, 23 g carbohydrates, 3 g fat (1 g saturated), 3 mg cholesterol, 3 g fiber, 103 mg sodium.
