Edamame Pasta

Don't know if everyone avoids pasta as I do. I never eat it and I miss it. So when I saw edamame pasta at Costco I bought it thinking, can't be too bad and I will have a little with grilled salmon. My experience was that I was feeling super sick within 10 minutes and violently vomiting every iota of it back up. Avoid; at least as far as I am concerned!

We have used it on and off for a few years, since we first found it at Costco, to no ill effect. It is more strongly flavored than regular or whole grain pastas so it helps to use it with a well flavored sauce mixture, but the protein boost is useful, particularly for my wife who always seems to be a bit short on it.

I suspect the problem is that is swells up in the stomach so a small amount becomes large. Dunno. I love edamame and do eat that but the pasta is on my strongly avoid list! Funny because having purchased at Costco I have a lot now that needs to be used. Guess hubby will be eating this quite regularly.

I don't know how much more it swells in the stomach after it is cooked, but it does absorb more water in cooking than regular pasta - an ounce cooks up into a lot more volume than the grain pasta - on the order of 50-100% more, so we do use less of it than normal grain pasta. IIRC, they say to boil up the water, shut it off and let it sit in it for 3-4 minutes before serving but we usually let it sit for 6-7 minutes, otherwise it is a *****ewy for our taste. That probably allows it to more fully absorb the water so it is less inclined to swell more afterward in the stomach. Or, there may be some other tolerance issue independent of that.

I've really enjoyed the black bean pasta that's available at Walmart. I eat it as a side dish to either chicken or fish with a veggie-heavy bottled Italian tomato sauce (the Bertolli sauces are nice) and grated Parmesan (which I grate myself).
No, it's not Fettuccine Alfredo, but then I don't eat much of that these days anyway. ;)

I would not even consider that. I probably would have a similar response to yours. Any pasta sits very heavy in my pouch.
But I use veggies spirals (from zucchini, or carrots, or other veggies). with a good sauce, I really don'e feel like a I miss anything.
