If you tried to make chia seed pudding, but failed miserably...
...then I think I can help. I am the most inept cook ever, so I wasn't too surprised that my first attempt to make chia seed pudding failed. The chia seeds stayed on the bottom, and barely swelled up at all. Usually I would give up, but the recipe sounded yummy and seemed like something even I should be able to handle. So the second time I tried, I read the instructions more carefully. After you make it, you need to stir or shake it a few times early on. D'oh! At first I assumed that I was the only person who would make that mistake, but I read on other forums that I'm not the only one, so I thought I'd share the tip.
The recipe is simple, easy to remember and experiment with:
1 part chia seeds to 4 parts milk (or nut milk) by volume
Add sweeteners, fruit, etc. according to your taste
That's it. I prefer to make one serving at a time so that I don't overeat. So what I usually do is mix everything up in a jar, and keep it near me while I do other things. I give the jar a good shake several times. Since the nut milk is cold, the whole thing is still cold about an hour or so later when it's ready to eat.
