...then I think I can help. I am the most inept cook ever, so I wasn't too surprised that my first attempt to make chia seed pudding failed. The chia seeds stayed on the bottom, and barely swelled up at all. Usually I would give up, but the recipe sounded yummy and seemed like something even I should be able to handle. So the second time I tried, I read the instructions more carefully. After you make it, you need to stir or shake it a few times early on. D'oh! At first I assumed that I was the only person who would make that mistake, but I read on other forums that I'm not the only one, so I thought I'd share the tip.

The recipe is simple, easy to remember and experiment with:

1 part chia seeds to 4 parts milk (or nut milk) by volume

Add sweeteners, fruit, etc. according to your taste

That's it. I prefer to make one serving at a time so that I don't overeat. So what I usually do is mix everything up in a jar, and keep it near me while I do other things. I give the jar a good shake several times. Since the nut milk is cold, the whole thing is still cold about an hour or so later when it's ready to eat.

I use coconut milk. The shaking is super important, I learned that the hard way! I sometimes add cinnamon and cocoa powder, it's like a chocolate pudding dessert.

I use coconut milk too, and sometimes cinnamon and cocoa powder or almond extract. I love the texture of it! It's like pudding, but more filling and more satisfying.

I only know chia in the context of chia pet, what does it taste like?

It doesn't have a strong flavour of its own. I'd say it tastes kind of like poppy seeds?

It really doesn't have any flavor. However, it takes on the flavor of whatever you put it in, so it's just like pudding pretty much. I like it because it REALLY gets things moving if you need some digestive help.

Flavorless. It gels and thickens really well. The seeds will get stuck in the nooks and crannies of your teeth. Keep a toothbrush close.

I've never heard of this but I love puddings so I am adding it to my list of recipes that I've been making in preparation for my surgery. Like was said earlier, you say chia and my next thought is "Pet". :) Thanks!
