something new to eat
i like to cook different things so last night i had jumbo shrimp, fresh onion, green peppers and mushrooms. i put them in a pan and put unsweetened pineapple juice on it and baked it until veggies are tender. has anyone made stuffed green peppers after surgery? i am thinking about using ground turkey, an egg or two, chopped onions and taco seasoning and mixing that up and stuffing it in the pepper.
I loathe green peppers with the strength of a thousand suns... however, I've made stuffed red, orange, and yellow peppers :D Or I'll cut the peppers in half and sort of do unstuffed, layered peppers. There are lots of great meaty recipes out there for stuffed/unstuffed peppers.

I have made a lot of types of stuffed peppers before and after surgery. I have made Philly cheesesteak stuffed green peppers. I have also made shredded chicken nacho peppers, lasagna stuffed, and a ground-chicken Buffalo with yellow and/or red peppers. All were adapted from recipes on Pinterest. Stuffed peppers typically freeze pretty well.

We love Stuffed peppers. I used finally chopped cellery for me instead of rice. My system doesn't like cauliflower.
Best stuffted peppers I even made, and still make often, are in electric Pressure Coker Instant Pot. It take 10 min, and the pepper is falling apart. If you tolerate cheese, (I am allergic to dairy proteins), mixing shredded cheese into the meat mixture before stuffing the peppers (loosely, don't pack the meat very tight ) resulted in nice gooey stuffing my guy really loves. Even now, when I use large peppers, I can only manage to eat 1/2.
