Low Carb Key lime pie
I wanted to share a really good recipe I found the other day that everyone liked, not just my WLS friends.
It is so easy to make too.
The crust is simply crushed pecans and butter with a sprinkling of stevia.
The filling is a 0.6 oz package of sugar free key lime gelatin
two 8 oz bricks of cream cheese cut into cubes
regular size tube of cool whip
In a big mixer, pour in the gelatin pouch and 1/3 cup boiling water
Once the gelatin is dissolved, add 1/3 cup cold water.
then mix in the cream cheese one cube at a time
then fold in the whip cream
pour over the pecan crust and chill!
you could top with more whip cream if you want.
It was really good. I was supposed to grind the pecans up like graham crackers but didn't want to get out the food processor. Everyone really liked the crunch of them just being crushed and it tasted really good. I took a whole nine inch pie in and it was gone by the end of my shift. Everyone liked it, even if they weren't a WLS person. Might be an idea for a pitch in or family gathering.
That looks nice and easy to make.
I wish I were not allergic to dairy. But I rather eliminate things my body don't tolerate than suffer the consequences.
