Quick, easy, and WLS friendly: sheet pan dinners

I wanted to share something I've been doing for dinners lately: sheet pan dinners! WLS friendly, good for the rest of the family, and stupidly easy.

  1. Snag a cookie sheet, line it with foil, and spray with nonstick spray.

  2. Spread the protein of your choice on the pan, cut up into 1" chunks. Boneless chicken thighs, pork chops, beef stew meat, or little balls of ground lamb or turkey.

  3. Dump a bag of frozen veggies on top, whatever type you like. Lots of good assortments to choose from!

  4. Drizzle some olive oil over the whole thing.

  5. Sprinkle the premade seasoning mix of your choice on top. You can find tons of these in the spice isle! I like chipotle BBQ with beef, and Mediterranean over chicken.

  6. Bake at 350 degrees until the meat is cooked through.

That's all there is to it! These make for great lunches, too; make dinner for the whole family, then pack the rest in small plastic containers and reheat them at work the next day.

You made this SO simple, and, yet, I STILL have a question...

About how LONG should I cook it? Approximately how long for meat to get done? 30 minutes? 45 minutes? I am SO not a cook!

It depends on the meat and how small the pieces are. 30 minutes should be good, though!
