Crock Pot recipes
I've been making Mississippi pot roast and just made a pork loin one.
Take a roast put a packet of dry onion soup mix on top, then a packet of dry ranch dressing, 1 stick of butter on top, a little crushed garlic on top of the butter and some pepperoncini's around it and I pour a little of the juice over the meat. Cover and cook on high for 8 hours. Once done pull apart. So good.
Here's a Greek Chicken recipe that I really love. I don't actually stuff the chicken but I just throw it all in the crockpot on top of the chicken. I'm not huge on measuring, either, and this recipe is pretty forgiving. It's also good as leftovers.

I was born and raised in TX, so Tex-Mex is near and dear to my heart. Many, many variations out there, but this is the easiest one yet:
3-4 boneless/skinless chicken breasts (could also use thighs, although I've never tried)
1 can black beans
1 can corn, drained
1 can Ro-tel (chopped tomatoes w/green chiles)
1 8-oz brick regular cream cheese
Throw in the slow cooker, 8 hours on low, and devour!
If desired, can add additional spices such as cumin or chili power, according to taste.

Chicken, Bacon and Sour Cream
8 slices bacon
8 Chicken Thighs
2 tins Cream of mushroom soup
1 cup sour cream
1/2 cup flour
Mushrooms,onions & Red Pepper if you desire
Chop up chicken & veggies - place in slow cooker
Mix soup, sour cream and flour then stir through chicken
Cook on low for 6 hours or so - can be 8 if that fits in with your schedule better
My fav crockpot meal is brisket, cabbage, and potatoes. Very simple:
Brisket with the little spiced packet
Cabbage slightly salt with sea salt
I like to chop onions
skip the potatoes maybe for bariatric friendly version
I add in my own spices sparingly because it is already pretty flavorful.
Very good and hard to over cook!
I also do a crock pot curry chicken which is incredibly simple too: chicken (best if browned but not completely necessary), seasoning (I like adobo, sea salt, curry (duh), cut red potatoes, pinch of thyme, bay leaf, chopped onions, drizzle a little olive oil. Very little water needed because chicken makes a ton of water.
