Crock Pot recipes
Put meat in pot. Put tasty sauce over meat. Cook. Enjoy. :D
Seriously--this is pretty much all a bariatric person needs. We are big fans of all Frontera sauces in our house and one of our favorite things is chicken breasts with Hatch green chile enchilada sauce poured over. We'll get the spiced trim-tip from Costco and make that with a red chile sauce. We've even done a boneless leg of lamb in our crock pot.
Make a quick veggie to go with for other people in the house, shred the meat for tacos or just have it plain. We'll also take the liquid from the crock pot and cook it down with some cornstarch for delicious gravy.

I do pork loin similar to Jen's. I use the Instant Pot but works for crock pot too. Brown chunks of pork loin, add half- â..." jar green salsa. I shake on s little adobo and cumin and cook. Shred. I always save a little sauce if it needs a freshening up at the end. Serve with rice or tortillas for others. Me with a veggie or occasionally a piece of a low carb tortilla(maintenance and still can rarely finish)
