Ooh I'm going to try zoodles in my soup! I've used cauli rice often and love that. Especially in a tomato rice type soup.

But zucchini is next up!

I thought it would get mushy, but it held up fabulously! It also soaked up the garlic and spices much better than pasta would.

I've made soup like this before and just cut out the noodles entirely (I honestly hadn't considered zoodles, but that sounds good!). I also cut my broth down so that it's more stew-like. Soup always confuses me to eat and I feel the need to drink the broth first anyway!

I make a lot of soups because they are economical -- plus I make broth so often I actually need to use it up (I don't always want to pressure can a batch) ...

However, my issue with it is that it breaks the "no fluids with meals" rule -- and I have a lot of trouble eating all the broth first and then eating the solids. So, I sort of avoid it because of that.

Do other people have this problem? Am I overthinking it?

I usually just eat the chunks and then dump out the leftover broth. Or sometimes I'll strain the meat and veggies out of the broth, eat those, then put away the broth to reheat later.
