The only fats in either diet that would be contributing to the obesity issue would be from processed/fast foods transplanted from their western counterparts.

Indian food is served with rice and naan bread as BASES.
Ethopian food uses fermented carby bread/pancake in one makes a pocket to pinch the meat/vegetable dish from a common serving bowl. The process results in the bread/pancake/carb being present in a larger percentage than the actual meat.

I partially agree with you that both cuisines emphasize legumes and breads . But they are also extremely high in fats .
Could you eat the fatty food without the " carbs " and lose ? I'm actually VERY curious . Maybe a few members actually from India and or Ethiopia would be kind enough to post about their own personal experimentation with diet and the results ?
The bulk of my pre-op weight loss happened on a very low carb to zero carb diet.
Fat doesn't cause you to gain weight. Almost always it's high carbohydrate intake paired with high insulin resistance, and fueled by disordered eating.
I follow a ketogenic diet post-op. I also have a diagnosis of binge eating disorder. Feel free to ask me about either!
