Volume is important when you are early out...it always is important but more so.
I have 2 TBSP measuring scoops that I buy at dollar tree than are 'coffee scoops' - one black one white on the card.
The transition to real food is hard and he wants to make sure you are trying small amounts... food getting stuck or vomiting is no fun.
That being said a coupe of things. If I am measuring something with a nutrition label it will always show the grams so I use that measurement for accuracy.
I also know the volume of all the bowls and cups in my cupboard. That helps both with measuring and making sure I am not having too much volume in my overall meal, especially now that I am further out and can eat more including veggies and salads.

I have generally ignored volumetric measuring under the premise that most of our foods are close to water density (where 1oz weight/mass = 1 oz volume, or 1g = 1ml) and go with weighing as a lot more convenient and avoids always having to wash all the little cups and spoons. It also avoids the conundrum of particle size and packaging - what exactly is a cup of spinach, how finely chopped or packed? Ultimately, as things get into your stomach and compressed (that's part of what your stomach does) it will all be compressed into a mush, which is what your stomach "sees", not how much air is puffing things up. 2 cups of salad greens may only be 2 oz by weight, but 2 oz of meat by weight will be about a quarter cup (2 oz volume.)

I measured by volume until I got to solid proteins as well. At my 1-month check in with my surgeon I specifically asked about the weight vs volume confusion. I was told to weigh anything but liquids, and that is what I've done ever since. I also use grams for accuracy if the label provides that info.
